Henry Chevallier Guild, eighth generation cyder and vinegar maker at Aspall. Re-launched the Aspall vinegar and cyder brands and grew them to national and international renown. Passionate and obsessive about making and sharing great tasting drinks, it was his time in the great vinegar barn at Aspall that triggered an enduring fascination about this most ancient and magical of liquids. A desire to moderate his alcohol consumption brought him into the orbit of shrubs;
Their unique characteristics, timelessness and ability to form the basis of genuinely interesting alcohol free drinks making periods of temperance no longer a sufferance. And when not abstaining – joy of joys – Henry found how shrubs can also turn their hand to being mixed extremely well with alcohol. Pimping up a G &T, astounding results with a whisky soda or making a simple classic, he continues to discover how shrubs can elevate your every drinking occasion.

Dates, it's all about the dates. How to preserve the excess crop from rotting. The solution? Tip them into a barrel of vinegar where the yeasts and mould can't survive. Leave them for a few months and the magic happens, the sugar in the dates infuses the vinegar and creates a rich sweet, sour syrup. A flavour to hide the brackish nature of desert water, and acidic enough to kill any pathogens that may be lurking in it. The perfect combination of style, form and function.
