The original cocktail comes from The Elixir in San Francisco courtesy of H Joseph Erhmann. Hints of berry and tropical fruit complement the Cognac subtly, and the acidity of the caramelised pineapple & ginger shrub removes the necessity of lemon juice. This cocktail has great balance and flavour

Ingredients
45ml Cognac
3 tsp caramelised pineapple & ginger shrub
2 1/2 tsp creme de cassis
1 egg white or 25ml aquafaba
Directions
- Blend all ingredients in a cocktail shaker
- Dry shake (without ice) for 5 seconds
- Add ice, shake again until cold
- Pour into glass filled with fresh ice
