for Caramelised Pineapple & Ginger Shrub

Cranberry is a very versatile juice with a delightful astringency. Combining it with our caramelised pineapple & ginger shrub gives this sour a rich, luxuriant mouthfeel and a hint of spice on the finish

Martini or coupe

Ingredients

25ml Caramelised Pineapple & Ginger Shrub

50ml cranberry juice

15ml aquafaba or 1 egg white

Directions

1. Measure ingredients into a cocktail shaker
2. Add ice
3. Shake well
4. Strain into glass
5. Garnish with root ginger
