Nonsuch Pina Colada

for Caramelised Pineapple & Ginger Shrub

Pina Colada is one of the most seriously underrated cocktails around. Made well, it is a fabulous thing. This version lends itself beautifully to being alcohol free 

Glass

Stemmed or highball

Ingredients

50ml caramelised pineapple & ginger shrub

75ml coconut water

75ml coconut milk

Directions

1. Tip ingredients into a blender
2. Add a few cubes of ice
3. Blitz
4. Pour into glass
5. Garnish with star anise
