Pineapple Daiquiri

for Caramelised Pineapple & Ginger Shrub

Rum and pineapple have been in an enduring love affair as long as rum has been distilled. Add to the mix some zesty lime juice and you have the makings of a truly great Daiquiri.

Ingredients

60ml white rum

15ml caramelised pineapple & ginger shrub 

5ml lime juice

Directions

1. Measure all ingredients into a cocktail shaker
2. Add ice
3. Shake well
4. Strain into glass
5. Garnish with pineapple chunk and lime
