VIRGIN MAI TAI
There are many variations on a Mai Tai, but we find this mix using Caleno Light & Zesty AND Dark & Spicy a very effective non alcoholic version. Rich, luxurious, indulgent and deeply tropical. Trader Vic - for 'twas he who invented the Mai Tai - would spot the difference to the original, but even he would agree this is a mighty fine alcohol free version.

Ingredients
35ml Caleno Light & Zesty
25ml caramelised pineapple & ginger shrub
25ml lime juice
Dash of Angostura Bitters
Caleno Dark & Spicy to float
Directions
- Measure all ingredients bar the Dark & Spicy in to a cocktail shaker
- Shake hard until cold
- Strain into glass with fresh ice
- Float the dark and spicy on top
- Garnish with a lime wedge, a pineapple wedge and a sprig of mint
